An Easy White Chicken Enchilada Recipe for Busy Nights

Time is always of the essence, whether you have a family or you live by yourself. You just never seem to have the kind of time you need in which to get anything accomplished, things done and your life in order. And one of the things that always seems to come last is your ability to prepare a healthy meal everyone will enjoy. We are all guilty of this from time to time (several times a week) and it leads to improper nutrition and even too much fast food. That’s why we love to find simple recipes for good food that don’t take a laundry list of ingredients, a lot of time and a lot of effort. We all need simple, go-to meals that we can rely on when time is not on our side. For that reason, we have come up with this amazing chicken enchilada recipe that is both simple and fast, and it’s also delicious.

What You Need

8 Flour tortillas

2 cups cooked chicken that’s been shredded

2 cups Monterey jack cheese, also shredded

2 cups chicken broth

1 cup sour cream

1 can green chilies – diced

3 tbsp. butter

3 tbsp. flour

To begin with, you will want to turn your oven to 350 degrees and let it preheat. Once you have done this, go ahead and start the prep work for this delicious  meal. You will first spray a pan (9×13) with cooking spray. In a large bowl, mix your chicken and half your cheese. Then place the mixture in your tortillas, roll them tight and place them in the pan with the seam at the bottom.

Using a small pot, melt your butter over medium heat on your stovetop. Add your flour and let it cook while you continuously stir for just one minute. Then you will add your broth, stir, and then let the sauce sit for a few minutes until it becomes thick. Once it’s thickened, take it off the stove and add the sour cream and your chilies, pour it over your enchiladas and place the rest of the cheese on top. You will stick it in the oven for approximately 25 minutes and serve when it’s still warm. Enjoy!
