Enjoy A Great Big Bowl Of Taco Soup On A Cold Day

Taco Soup is another recipe that is a hit with my family.  No mater if I fix this once a week they are always happy to smell it simmering on the stove when they walk in the kitchen.  It is the perfect mix of tex mex and the warmth only a soup can give.

To fix Taco Soup, gather the following ingredients: 1 pound hamburger meat, 2 cans black beans, 2 cans Mexican corn, 1 can chicken broth, 1 package taco seasoning, 1 package Hidden Valley Ranch Dip Mix and 1 jar of salsa.

Brown your hamburger and drain excess grease.  Put in crock pot.  Drain black beans and rinse then add to crock pot.  Repeat the same process with the Mexican corn.  Add salsa, chicken broth, 1 can of water and dry mixes.  Stir.  Allow to come to a simmer for 25 minutes before eating.  It can also be fixed on the stove.  Simply bring to a simmer and allow to simmer 25 minutes before eating.

Serve Taco Soup with Fritos or Tortilla Chips.  Taco Soup can be garnished with cheddar cheese shreds or crumbles, sour cream or both.

This recipe can be made healthier by choosing low-fat chicken broth, a lean hamburger meat, baked Tortilla Chips, low-fat cheese and low-fat sour cream.

This recipe feeds a family of four for two days.  Can easily be doubled to feed a bigger crowd.

Taco Soup pairs well with a cinnamon bread or cinnamon rolls.  My family likes to drink milk with their Taco Soup to make the heat of it be milder.  You can also make Taco Soup with mild taco seasoning and mild salsa to keep it from being too warm.  This is a recipe that has made it to our table time and time again and there are never any leftovers.   It is also a good choice for lunch the next day, if there is any left!
