The Perfect Summer Salsa Recipe

Temperatures are rising and summer is just around the corner. Kids will be out of school and the pool will be the most occupied part of your house. The dilemma of finding healthy, delicious snacks for everyone to enjoy throughout the day is challenging this time of year, which is why the perfect summer salsa is the answer to your summertime snack cravings. Salty and fabulous, this vegetable salsa is easy on your waistline and just spicy enough to give you the kick you need.

The perfect summer salsa is simple and inexpensive to make. Depending on how much you want, you need a few basic essentials; this recipe is perfect for a family of four to enjoy on a lazy summer afternoon. To make more, you only need to add to the recipe by doubling or tripling it; or making even more if you want.

Ingredients

2 medium tomatoes
2 limes
1 clove garlic
1 jalapeno pepper
1 small onion
1 handful cilantro

Start by cutting both tomatoes into small pieces and placing them in a large bowl. Add half the small onion, a clove of garlic, cilantro, and the jalapeno pepper, all chopped finely to the tomatoes. Roll the limes on your kitchen counter, applying pressure to them. For a hot salsa, leave a few of the seeds from the jalapeno pepper into the mixture. For a salsa that isn’t very hot, remove the seeds from the pepper.  Cut each lime in half and squeeze the fresh lime juice into the bowl of chopped vegetables. Mix with a fork and serve with chips for a fresh, healthy snack that is sure to have everyone wanting more.
